Double Chocolate Cookies

These where probably the most delicious cookies I have ever made. Someone told me try taste a little like the pastry part of a chocolate pop tart!
So, here's how ya make them!

• 1 1/4 cup flour 
• 1/4 cup unsweetened cocoa 
• 1/2 tsp. baking soda
• 1/4 tsp. salt
• 1/2 cup earth balance
• 1/4 cup granulated sugar 
• 1/4 cup brown sugar
• 2 tbsp. non-dairy milk
• 1 tsp. vanilla extract
• 1 handful chocolate chips 

Preheat oven to 350
Combine wet ingredients (melted earth balance, both sugars, milk, and vanilla) in one bowl and in a separate bowl combine dry ingredients then add the wet to the dry and mix well then fold in chocolate chips. 
 Cover and pan with wax paper or parchment paper and roll the dough into 1 1/2 balls and smush them down gently
 Bake for 10-12 minutes (mine took 12)
 Let cool for 5 minutes before moving to a wire rack to finish cooling

This makes about 18 cookies and they should be served with a tall glass of almond milk! Enjoy!
